This Lechussoise recipe is the vegan version of the famous Vichyssoise cold cream, without having to add cream or milk. As always, preparing it is very simple and will allow you to eat the healthiest thanks to the vegetables that make it up.

Ingredients for the lechussoise

  • Leeks (2)
  • Zucchini (1)
  • Garlic clove (1)
  • Extra virgin olive oil (10 ml)
  • Black pepper (1 pinch)
  • Salt (1 pinch)
  • Raw cashews (8-10)
  • Water (400 ml)

How to make Lechussoise, the vegan recipe for Vichyssoise

Time required: 25 minutes

It will take about 5 minutes to prepare and another 20 minutes to prepare

  1. Peel the leek and zucchini. Cut both vegetables into chunks.

    Do the same with the garlic, removing the germ so it does not repeat itself.

  2. Put a pot over medium heat and add a drizzle of oil.

    When it's hot, add the zucchini, leek, and garlic to the pot. Stir well to integrate with the olive oil.

  3. Then add the salt and pepper, keep stirring until the vegetables are browned.

    Finally, add the cashews and mix them with all the vegetables.

  4. Add water until all the vegetables are covered and bring to a boil.

    Turn off the heat when the vegetables are soft, also the cashews.

  5. With a blender or food processor, mash the vegetables and cashews until you get a uniform mixture.

    When you have the cream, keep it in the fridge for about two hours to serve it cold.

A vegan recipe that is perfect as a cold cream

Simple, right? As you can see, it is very similar to a vegetable puree in which we have added raw cashews. This dried fruit is responsible for achieving a very similar Vichyssoise texture, without having to use any product of animal origin.

If you want to add more nutritional value to this recipe, you can substitute vegetable broth for the water. The amount you should add is the same, with one level in the pot just above the vegetables. If you want it more liquid or thick, you just have to modify the amount of liquid you add.

Finally, you can decorate your Lechussoise by adding a little dried oregano and drawing a geometric shape with a splash of tamari.
